Sauerkraut, which is considered a super food, has been around for over 2000 years.
It is basically a fermented cabbage which is easier to digest than a fresh cabbage with some outstanding health benefits due to the fermentation process it goes through.
Its fermentation starts when yeast and bacteria that are naturally present on the cabbage and in the air respectively, come in contact with theĀ sugars contained the cabbage. This fermentation creates conditions that promote the growth of beneficial probiotics which are good bacteria (similar to the ones found in yogurt). Probiotics can in fact help improve gut health and digestion.
