In one of our recent social media posts, we passed the recipe buck to our followers, asking them to suggest the next Mirror Friendly recipe by choosing a combo from the following 2 pots:
a) Breakfast. lunch, dinner or snack
b) Sweet or savoury
After rounding the answers across our Facebook and Instagram platforms, the winning combo was savoury snack.
Enter the Mirror Friendly Chickpea Cookies
When preparing our recipes our priority is delivering something which is made from healthy ingredients while providing a balance between proteins, carbs and fats. Needless saying, a pleasant taste and texture is also kept top of mind. As you will be able to confirm below, this also the case with our chickpea cookies which are ideal as a snack between meals or a side dish to your main meals if for some reason you had to skip your snack.
The following ingredients were used to make 15 chickpea cookies:
– 1 can of chickpeas
– 30g spelt flour
– 1 egg
– 1 clove garlic
– 1 teaspoon himalayan salt
– 1 teaspoon black pepper
– 1 tablespoon extra virgin olive oil
Step by step instructions in preparing the Mirror Friendly chickpea cookies:
1) Preheat oven to 180 degrees
2) Grease a baking sheet with olive oil
3) Place all the ingredients in a food processor and blend/chop until well combined in a smooth batter
4) Form small balls from the batter and place them on the baking sheet.
Note: Here you might want to experiment with the size of cookies. The thinner you make them the crispier they will become. You can customize the recipe to your liking by adding sun-dried tomatoes, rosemary, chili flakes or fresh basil. You can also use different toppings such as chia seeds, pumpkin, poppy or sesame seeds.
5) Bake for 15 to 20 minutes
6) Allow it to cool down and bon appetit!

Protein: 2g
Carbohydrates: 4g
of which sugar: 0g
of which fibre: 1g
Fats: 2g (Note: no trans fats in here)
