One thing is to separately eat an egg, oats, a carrot or a coconut and another thing is to have all these combined together in a scrumptious recipe that makes for a great healthy snack on the go.
Enter the Mirror Friendly Oatmeal Carrot Cookies…
The following ingredients were used to make 11 oatmeal carrot cookies:
– 80g oats (Note: ideally quick oats)
– 70g spelt flour
– 1 large grated carrot
– 1 whole egg
– 30g butter
– 50g coconut sugar
– 1 teaspoon cinnamon
– 1 teaspoon baking powder
– 1 teaspoon baking soda
Step by step instructions in preparing the oatmeal carrot cookies:
1) Preheat oven to 180 degrees
2) Mix dry ingredients together – oats, spelt flour, coconut sugar, cinnamon, baking powder and soda
3) Melt the butter and let it cool down
4) Mix wet ingredients – melted butter, egg and carrot
5) Mix dry and wet ingredients together and make a dough
6) Form the dough into cookies and bake them for about 17 to 20 minutes until of golden brown colour
7) Et voila… Let them cool down and bon appetit!
