Say what!? Chips on Mirror Friendly? Yes that’s right, but these aren’t your usual deep fried, artery clogging potato chips. These are clean, healthy zucchini chips.
Enter the Mirror Friendly Zucchini Chips…
They are so tasty it’s hard to stop eating them. Fortunately they are baked, not fried, and use very little oil. My family gobbled them up when I made them. The best part? They are simple to make and don’t require a tonne of ingredients so they won’t drain your wallet either.
The following ingredients were used to make 2 portions of zucchini chips:
– 4 small zucchini, thinly sliced into rounds (best if you use a mandolin slicer to get them thin, otherwise try using a box grater on the side with the three horizontal grate openings)
– 2 tablespoons extra virgin olive or camelina oil
– 2 tablespoons dried rosemary or more if you like
– 1 teaspoon *coarse sea salt
– 1.5 tablespoon ground black pepper
*the photo of the ingredients shows table salt but when I was cooking these chips it was raining cats and dogs so I had to use what I had home
Step by step instructions in preparing the zucchini chips:
1) Preheat oven to 160 degrees.
2) In a large bowl, drizzle zucchini slices with olive oil. While it may not seem like a lot of oil, trust me it’s enough. They will shrink A LOT.
3) Lay out a single layer of slices on parchment paper or baking tray. Season one side with half of the ingredients.
4) Bake slices for 45 minutes on one side, remove from oven and flip. Season opposite with remaining ingredients. Bake for another 45 minutes. They will be crisp and golden brown (but not burnt) when done. I find these are best eaten in the same day they are made. I found that sometimes they got a bit soft the next day (but trust me they still tasted good).
5) Enjoy the healthy goodness!
IMPORTANT: Pay attention to individual slices as bake time may vary depending on thickness.
Note: You can also use a dehydrator, if you have one, to crisp these up. You won’t get the golden colour but they will still come out crispy. If you are on a raw food diet, then you can still eat these if you use a dehydrator.

Calories: 176 kcal
Protein: 3.5g
Carbohydrates: 9g
of which fibre: 3g
of which sugar: 4.5g
Fats: 14g (Note: no trans fats in here)
